Lemon Mediterranean Chicken

¼ cup olive oil
2 T. lemon juice
2 T. lemon zest
4 garlic cloves, minced
1 T. dried oregano
½ teaspoon ground black pepper
4 skinless, boneless chicken breasts (4 ounces each)
8 baby red potatoes, halved
1 red bell pepper, cut into strips
1 red onion, cut into strips
1. Preheat oven to 400 degrees F.
2. Combine olive oil, lemon juice, lemon zest, garlic, oregano, and black pepper in a bowl. Place chicken breasts into a 9x13-inch baking dish coated with cooking spray. Brush lemon juice mixture over the chicken.
3. Place potatoes, bell pepper strips, and onion strips around the chicken breasts in baking dish. Brush or pour the remaining lemon juice mixture over the vegetables. Cover pan with foil.
4. Bake in the preheated oven for 50-60 minutes until the chicken reads at least 165 degrees F and the potatoes and vegetables are tender soft.
